Recipe:


The eggplants must be halved or cut into three slices, depending on their thickness.

Then place the slices next to each other in a baking dish and drizzle with olive oil. Bake in the oven at 190°C for approx. 35 minutes until soft.


Meanwhile, prepare the mixture as following:

  • 2 tomatoes chopped into small pieces

  • 1-2 garlic cloves pressed

  • 1 hand full parsley

  • 1 teaspoon tomato paste

  • 1 teaspoon chili paste (available in Turkish supermarkets)

  • Olive oil


Mix all ingredients well.


Spread the mixture over the eggplant slices. Finally, optionally add a little cheese and then bake for a further 15 minutes at 180°C. For a portion of protein, you can add cooked brown lentils to the mixture.


This dish goes well with rice, potatoes, couscous, quinoa or amaranth.
